FOODIE FRIDAY: MIL’S Chocolate Chip Granola.




4 cups old fashioned Oat Meal
1 cup canola oil (I think you can replace this with some honey if you wanted to.)
1 cup maple syrup
1 cup dried cranberries
1 cup almonds
1 cup crushed pecans
2 tsp cinnamon
2 tsp vanilla
1 cup whole wheat flour
1 or 2 handfuls of chocolate chips

(coconut optional)



Mix in a large bowl with your hands.
Place on parchment paper on a baking tray
Smash the mixture down onto the tray until it is thin and flat
Bake on 350 for 25 minutes


Normally, I’m not much of a granola person, but my MIL baked some up this week and  in true mother in law fashion forced me to try it “Come on, JUST TASTE IT!” She modified a recipe for biscotti that she got from her aunt and added some chocolate chips to the mix and then turned it into granola. Granola without chocolate chips is really just oats and dried fruit. Granola WITH chocolate chips is a treat, yo.

I’m eating that bowl of fruit, greek yogurt and granola right now as I type this. I also love that she left some of it super chunky so that you could actually use it as a like a rough chop biscotti. I know this is not particularly “healthy” considering there is a cup of oil in it, but I have read that you can substitute oil with honey and a little water. I think you could also just cut down on the oil a lot and just lightly coat it. Additionally, I think coconut oil in small amounts works too.
